Caol Ila

Caol Ila Distillery was founded in the north of Islay in 1846 by a man with a pleasant name, Hector Henderson. It is located near Port Askaig in a lush floral setting and rises above the bay and mountains of Paps in the southern part of the island of Jura. This distillery draws water from Loch Nam Ban, whose waters flow through limestone and peat before reaching its user, Caol Ila.

The whiskey distillery was bought by Norman Buchanan in 1852 and then, after the financial crisis, by Bulloch, Lade and Co blenders from Glasgow, who renovated the buildings in 1879. After liquidation, the distillery was bought by Distillers Company Ltd, transferred to Scottish Malt Distillers. . Its capacity is not large, with 3.65 million liters per year, most of which is used for Johnnie Walker's blends. Only 5 percent is left for maturing single-species whiskey.

Single-type whiskey has been experimented with since 1999, and in 2006 the first peat-free series of eight-year-old Caol Ila whiskey, whose name is derived from Gaelic and means "Sound Islay", was released and included in the Diageo Classic Malts product range with twelve and eighteen-year-old whiskeys, as well as the Distillers Edition with the Moscatel finish.
