Apricot jam Gentlejam Apricot in the Caribbean was created by MasterChef finalist, Adriana Ihring, as part of the - Gentlejam by Top Chefs edition. It uses Caribbean rum with an orange Espero flavour. It's refreshing because Adriana has incorporated lemon zest and juice with tonka beans, which are not so commonly used in our country. The jam is slightly thick, sweeter but tastes fabulous.
Adriana recommends serving this jam with cheeses, whether blue mould, medium and long-ripened cheeses, or even cooked cheeses.
The jam is 250 g and has an alcohol content of 6,2 %.
