Primitivo di Manduria D.O.P. Passo del Cardinale comes from the Paololeo winery in San Donaci.
This excellent wine is made from Primitivo grapes grown with Apulian planting in vineyards in the territory of Manduria (Taranto). The grapes, harvested in the first week of September, are pressed and then fermented in stainless steel containers at a controlled temperature.
Finally, as a result of the fermentation processes, the Passo del Cardinale is matured for 3 months in American oak barrique barrels and 6 months in steel tanks.
The excellent quality will surprise you with body and balance along with a subtle elegance. We recommend serving at 18 °C. We recommend serving with red sauces, roasts, cheeses, mushrooms and game.
