Primitivo di Manduria D.O.P. Passo del Cardinale comes from the Paololeo winery in San Donaci.
This excellent wine is made from Primitivo grapes grown in the Apulian plantation in vineyards in the territory of Manduria (Taranto). The grapes harvested in the first week of September are pressed and then fermented in stainless steel vessels at a controlled temperature.
Finally, as a result of the fermentation processes, Passo del Cardinale matured for 3 months in American oak barrique barrels and 6 months in steel tanks.
The excellent quality will surprise you with body and balance along with subtle elegance. We recommend serving at a temperature of 18 °C. We recommend serving with red sauces, roast, cheese, mushrooms and game.
