The basic ingredients of the rum are sugar cane and molasses. Molasses is the sweet and sticky residue from crushed and heated sugar cane, which is traditionally harvested by chopping with machetes.
Fresh plants must be processed within a day. The resulting intermediate product is boiled to produce sugar cane and molasses. The molasses is boiled a second time and mixed with water and yeast.
It is matured for 3 years in French Limousin oak casks, which were originally used for the maturation of Chivas Regal whisky. Vanilla aromas, caramel flavours, coconut, hints of cardamom, orange, banana, ginger and a subtle alcohol aftertaste.
