Description

KI NO BI Kyoto Dry Gin comes from Kyoto Distillery. The base for gin production is rice spirit, as well as local botanicals - yuzu, hinoki wood chips, bamboo leaves, green sansho, and gyokuro green tea. Botanicals are divided into six groups - basic, citrus, tea, spice, fruit and flower.

KI NO BI uses a variety of traditional Japanese herbs and spices. This gin is distilled in a traditional pot still. Each ingredient is distilled separately to achieve optimum aroma and flavour. The water is collected from the Fushimi Spring in Kyoto, which is renowned for its purity.

After distillation, the individual spirits are combined and stacked. The gin is aged in traditional oak barrels, which are adapted to Japanese conditions. The bottles are filled at 45,7 % alcohol and the volume is 0,7 l.
