KI NO BI Kyoto Dry Gin

KI NO BI Kyoto Dry Gin comes from Kyoto Distillery. The base for gin production is rice spirit, as well as local botanicals - yuzu, hinoki wood chips, bamboo leaves, green sansho, and gyokuro green tea. The botanicals are divided into six groups - base, citrus, tea, spicy, fruity, and floral.

KI NO BI uses various traditional Japanese herbs and spices. This gin is distilled in a traditional pot still. Each ingredient is distilled separately to achieve optimal aroma and flavor. Water is sourced from the Fushimi spring in Kyoto, which is known for its purity.

After distillation, the individual distillates are blended and layered. The gin ages in traditional oak barrels that are adapted to Japanese conditions. Bottles are filled with an alcohol content of 45.7 % and a volume of 0.7 l.
