The red, dry wine Tajna Maxx Reserva of the Merlot grape variety comes from the Sari vineyard, Tajna winery, vintage 2019 and was made from over-ripe grapes.
The wine initially impresses with a beautifully intense aroma, which features bright fruit notes, complemented by vanilla bean and chocolate-covered raisins.
The taste is in harmony with the aromatics, creating a harmonious impression. A mouthful of fruitiness is complemented by notes of dark chocolate, liquorice with a hint of tobacco. The wine has fine tannins which make it sensual and velvety. There is a very nice, long aftertaste on the finish that enhances the whole drinking experience.
The merlot was harvested by hand and after sorting through the ripest whole bunches. The fermentation of the mash was carried out in vinifiers (stainless steel and wooden) with immersion. In this way, a significant extraction of aromatic and flavour substances from the grapes into the must was achieved.
After the malolactic fermentation, the merlot was aged for 9 months in wooden barrels of the premium brand Seguin Moreau with varying degrees of firing. After racking into smaller 300 litre barriques, the maturation process continued for a further 6 months. The wine was then blended and bottled.
Serve at a temperature of 15-17 °C after decanting from the decanter in 550-650 ml 'bordeaux' shaped goblets.
Recommended with rib-eye steak with mustard aioli and lightly steamed vegetables; roast venison with cranberry sauce and polenta; pork 'prosciutto' with dark olive tapenade.
