Sugar cane is harvested and pressed to extract the sweet juice, which is used for fermentation. The sweet cane juice is then fermented using yeast. The fermented mixture is double distilled in a traditional still. This results in a higher alcohol content and richer flavor. Bottles are filled with an alcohol content of 40%.
The distillate is aged in ex-bourbon oak barrels, where it matures for a minimum of 12 years. During aging, the rum absorbs the character of the wood and develops a complex flavor profile.
