Providence 3 Year Old 2020
This Providence 3 Year Old 2020 represents the distillery's second mature rum. The special feature of this rum is its processing based on traditional methods. It is made from syrup from the original Cristalline sugar cane variety. The cane sugar comes from the Michel Sajous fields located in Saint-Michel de l'Attalaye.
The distillery de Port-au-Prince is also reviving the tradition of double distillation with Haiti. Fermentation is carried out using selected yeasts, which allows it to develop a particular aromatic complexity. The rums are produced in a Müller pot still, leaving the first batch at 25-30 % ABV and the second batch at 72-78 % ABV. This version was matured for 3 years in ex-Providence rum casks.
By being aged in the distillery's casks, this bottle fully expresses the brand's identity. These casks are made from new American oak. The barrels have been filled and fired three times over a period of two years to allow the wood to 'get used' to the rum, allowing it to age gently at its best. This new release stands out for its energetic fruity, rich and spicy notes.
The bottles were bottled at 52 % alcohol, with a volume of 0,7 l and come in gift boxes.
