Labourdonnais Lady Blue
Pronunciation: { La-bour-da-neis Lej-dy Blu }Craft Rum Labourdonnais Lady Blue ages 6 to 12 months in ex-bourbon Jim Beam barrels.
The result of vanilla, spice, and wood chip maceration is a spiced “agricole” rum with gingerbread, mint, and a woody popcorn finish.
Lady Blue embodies the seductive colors and aromas of Mauritius.
Sugarcane is harvested to produce fresh sugarcane juice. Fresh sugarcane juice is filtered to remove any fine fibers. Yeast is then added to the juice and it is kept in a tank for 44 hours.
Once the desired yeast concentration is reached, part of the mixture is transferred to a fermentation tank and fresh juice is added. The fermentation process lasts 35 hours.
The next step is distillation. The distillation column has a total of 39 chambers.
The desired distillate is collected in three different chambers. The lowest chamber contains heavy distillate, while the highest chamber contains lighter distillate.
The final product leaves the column, passes through a condenser, and is collected in 25,000-liter stainless steel tanks.
Bottles are filled with an alcohol content of 40% at 0.7 l and are delivered in gift cartons.
