Labourdonnais Raph Dodo 5 Year Old
Raph Dodo has undergone a 5-year maturation process in ex-cognac barrels at the stunning Domaine de Labourdonnais in Mauritius.
This tropical ageing gives the rum a distinctive flavour with hints of vanilla and sweet spices, complement ed by notes of citrus and dried fruits such as apricots and figs.
Sugar cane is harvested to produce fresh sugar cane juice. The fresh cane juice is filtered to remove all the tiny fibres. Yeast is then added to the juice and kept in a tank for 44 hours.
Once the desired yeast concentration is reached, part of the mixture is transferred to the fermentation tank and fresh juice is added. The fermentation process takes 35 hours.
The next step is distillation. The distillation column has a total of 39 tanks.
The required distillate is collected in three different tanks. The lowest tray contains the heavy distillate, while the highest tray contains the lighter distillate.
The final product leaves the column, passes through a condenser and is collected in 25,000 litre stainless steel tanks.
The bottles are filled at 40 % alcohol with a volume of 0,7 l and are supplied in gift cartons. The bottles are in the unusual shape of the dodo bird which lived on the island of Mauritius.
