Kilchoman New Oak Single Cask Finish
Kilchoman New Oak Single Cask Finish is a single malt whisky that has been matured in new Carpathian oak casks and then transferred to re-fired large 300 litre red wine casks. Only a very limited number of bottles were produced - 291.
The new bottling is the result of Anthony Wills' experiment with maturation in new oak casks ('Virgin Oak' may no longer be used). Always aware of the risk that the woody and resinous flavours of the new cask could quickly overpower the light and smooth Kilchoman whisky, Anthony Wills nevertheless decided not to follow the usual route of using bourbon casks in combination with New Oak casks made from American white oak, but instead chose to use toasted and re-charred red wine casks for maturation, and new casks made from European oak from the Carpathian Mountains for aging.
The whisky was first matured in red wine casks for over five years and then finished in new Carpathian oak casks for over 18 months. The result is a Kilchoman whisky unlike any we've tasted before: the sharpest Kilchoman whisky ever.
The bottles are bottled at 57,1 % ABV, 0.7 l, and come in gift cartons.
