El Amparo
El Amparo is a pure single rum from Ecuador, produced in the city of Jipijapa, Manabí, from a variety of sugar cane commonly known as Cubana Negra. "Amparo" means "shelter" in English. The name was created by Gonzalo Almanzor Zorrilla Toala, the grandfather of Carlos, the current owner of the distillery, on his mother's side.
Fermentation begins naturally and takes place using native yeasts in vats with a capacity of 1,000 to 3,000 liters. It lasts 5 to 7 days depending on the sugar concentration at harvest time. Distillation is carried out in a 500-liter copper still, which consists of a small boiler with a short external column.
After one pass, the distillate leaves the still with an alcohol content of 60%. This alcohol content is then bottled. This bottle was created to celebrate 60 years of experience from three generations of the Zorilla family.
We recommend serving it chilled on its own as an aperitif before meals or in various mixed drinks.
