After more than a decade of experience in planting their own plum orchards, the experts at the Jelinek distillery decided to invest in apricot and cherry orchards as well. In 2014, they established a cherry orchard in Kostelany near Kroměříž.
Distilling has a long tradition in Wallachia, so it is not surprising that, in addition to plums, the region's typical late varieties of dark cherries have also started to be distilled here. These cherries thrive in the foothills of the Beskydy Mountains and therefore achieve ideal ripeness and sugar content. It is these cherry varieties that are processed according to traditional recipes using modern technology.
The mature cherry ferment with the pits undergoes a three-stage distillation process and is matured in stainless steel tanks for at least a year before bottling, which harmonises the flavours and aromas and results in an overall 'roundness'.
We recommend serving spirit at room temperature, as this is the only way to achieve the full development of its flavour and aroma. The bottles are filled at 42 % alcohol with a volume of 0,7 l.
