Leading independent Scotch whisky distillery The GlenAllachie presents the first single malt in its Master of Wood series: a 17-year-old whisky finished in Mizunara & Oloroso Sherry casks.
Led by a master whisky maker with 52 years of experience, Billy Walker, this multi-award winning Speyside distillery is renowned for its ability to source and craft not only quality but also unusual casks from around the world.
The new 17 year old expression showcases whiskies matured in rare Japanese Mizunara oak casks combined with spirit from rich Oloroso Sherry casks.
Mizunara is a rare Japanese oak that is rarely used to age whisky, due to its high price and the challenges it presents in the cask making and maturation process. It has a tendency to twist as it grows, making it difficult to make slabs, and its porous structure means that casks can leak.
Translated in English as 'water oak', Mizunara is very low in tannins but high in vanilla aromatic compounds. Mizunara casks typically add notes of sweet spice, sandalwood and charred oak.
Produced in the Andalusia region of Spain, Oloroso is a dry sherry that undergoes a long oxidative maturation without the 'flor' yeast layer. It is known for its dark colour and its distinctive nutty and dried fruit notes.
This unique edition is the first in a new series from Masters of Wood: the ultra-premium part of their Wood Collection, which is reserved for the most luxurious and experimental wood barrel finishes.
